Spicy Lobster Pasta

Treat yourself to the incredible flavors of this spicy lobster pasta. This simple yet delicious recipe brings together the best of a restaurant-quality dish, right to the comfort of your own home.

Serves 2-4

INGREDIENTS:

  • 1/2 lb capellini or spaghetti (or your favorite pasta)

  • 1/4 - 1/2 lb lobster meat, chopped

  • 4 garlic cloves, minced

  • 1/2 shallot, finely chopped

  • 1 tbsp crushed Calabrian chili pepper

  • 1/2 tsp salt

  • 1/4 tsp brown sugar (optional)

  • 1/4 cup vodka or white wine

  • 6 oz tomato paste

  • 2 tbsp salted butter

  • 3/4 cup heavy cream

  • 1/4 cup Parmigiano Reggiano, finely grated

  • 1/4 cup Italian parsley, finely chopped (optional)

INSTRUCTIONS:

  1. Boil a large pot of water.

  2. At the same time in a sauté pan, melt butter on low heat and cook chopped shallot until soft (about 3-4 minutes). Add minced garlic and cook for another 1-2 minutes.

  3. Combine Calabrian chili pepper, tomato paste, salt, and sugar in the sauté pan. Stir and cook on medium-low heat for 2-3 minutes until the tomato paste deepens in color.

  4. Pour 1/4 cup of vodka or white wine into the sauté pan to deglaze it. Stir until it evaporates (about 1-2 minutes).

  5. Add heavy cream and Parmigiano. Add more salt to taste.

  6. Add chopped lobster and let it simmer for 3-4 minutes on low heat.

  7. Stir in chopped Italian parsley.

  8. Once the water in the first pot is boiling, add plenty of salt and cook the pasta until it's al dente. Save 1 cup of pasta water.

  9. Drain the pasta and add it to the sauté pan with the spicy lobster sauce and 1/4 cup of pasta water. Toss on high heat until the pasta is fully coated in the sauce. Add more pasta water as needed, about 1/4 cup at a time.

  10. Plate the pasta, sprinkle Parmigiano parsley on top, and serve!
