Let’s Taco Bout It

I have a friend who is faithful to Taco Tuesday. Tacos are a fun and easy way to get people around the dinner table giving the space to be creative with their dinner plate. Doesn’t have to look perfect as long as it tastes great!

Serves 4-6

INGREDIENTS:

Chicken

  • 2lbs boneless chicken thighs

Marinade

  • 2 tbsp kosher salt

  • 1 tsp onion powder

  • 1 tbsp garlic powder

  • 2 tsp ground cumin

  • 1 tsp ground cinnamon

  • 1 tsp fresh ground black pepper

  • 1 can chipotle chiles in adobo 

  • 2 tbsp vegetable oil

Black Beans

  • 1 tbsp oil

  • 1 tbsp unsalted  butter

  • 1/2 onion

  • 2 cloves garlic

  • 1 sliced serrano

  • 1 can black beans

  • Salt and pepper to taste

Veggies

  • 1 large sweet onion

  • 1 large red bell pepper

  • 1 large green bell pepper

  • 1 large yellow bell pepper

  • 1 jalapeno thinly sliced

  • 3 cloves garlic, thinly sliced

  • 3 tbsp vegetable oil

  • Salt and pepper to taste

INSTRUCTIONS:

Chicken 

  1. Place chicken thighs into a bowl. Clean with vinegar and lime juice.

  2. Add to a blender or food processor all marinade ingredients.

  3. Pour over chicken and toss in the marinade.

  4. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour to overnight.

  5. In a medium skillet, heat enough vegetable oil to coat the bottom of the pan, and once hot add the chicken. 

  6. Sear for 3-4 minutes. Flip and sear for 3-4 more minutes.

  7. Add chicken pieces to a baking sheet and bake in a preheated oven set to 400F for 10-15 minutes or until internal temperature is 165F.

  8. Cut chicken into bite-sized pieces and optionally add salt to taste and a squeeze of fresh lime juice.

Beans

  1. Add oil to a medium pan, add in unsalted butter and heat over medium heat.

  2. Add in diced onions, sliced garlic, and thinly sliced serrano chiles once the butter is melted. Saute until nice and soft.

  3. Add in a can of beans, season to taste with salt and pepper, and cook until heated through.

  4. Transfer to a blender and blend until smooth.

Veggies

  1. Slice your veggies and light them up in the pan.

  2. Finally, assemble your tacos to your liking. I always like to have a variety of tortillas available.

ADD ONS: 

  • Cotija Cheese

  • Cilantro

  • Diced Onions

  • Jalapeno Peppers
